葱油饼 / Scallion Pancake¶

Flour [100 g]
Cooking oil [30 ml]

🔢Directions¶
Make dough by mixing 90 grams of flour, 45 ml of hot water and ⅛ tsp of salt, let sit for 20 minutes
Add 10 grams of flour and ⅛ tsp of salt to a bowl
Chop green onions
Heat cooking oil in a pan until it smokes
Add chopped green onions to the pan, then pour into the bowl, mix well
Reshape the dough into a cylinder, and cut into small discs
Layer the discs together with scallion oil brushed in between each layer
Press down to make a pancake, then let sit for 15 minutes for dough to relax
To a heated pan, add the pancake and steam on both sides over low heat, for 8 minutes
Make a few cuts and serve
