Squid

Cooking wine

Cooking oil

🧂Seasoning

Soy sauce

Mirin

Shichimi

🔢Directions

  1. Clean and weigh squid

  2. Marinade squid in soy sauce, mirin and cooking wine overnight (weight of sodium from soy sauce should be 1.2% the weight of squid, use equal amount of soy sauce and mirin)

  3. Air fry squid (4 minutes on each side)

  4. Reduce marinade in a pan with a little cooking oil over low heat until thick, then dress squid in sauce

  5. Serve with mayo and/or lemon, shichimi on a preheated platter
