Clean and weigh squid
Marinade squid in soy sauce, mirin and cooking wine overnight (weight of sodium from soy sauce should be 1.2% the weight of squid, use equal amount of soy sauce and mirin)
Air fry squid (4 minutes on each side)
Reduce marinade in a pan with a little cooking oil over low heat until thick, then dress squid in sauce
Serve with mayo and/or lemon, shichimi on a preheated platter
