酸菜鱼 / Fermented Mustard Greens and Fish Soup¶

🥦Ingredients¶
Lacto-fermentation brine
Vermicelli (optional)
Organic canola oil
🧂Seasoning¶
White pepper (¼ tsp)
🔢Directions¶
Slice fermented mustard greens diagonally
Rinse dried chili and cut into rings with a pair of scissors
Slice garlic, ginger, green onions
Slice fish filet and season with salt and white pepper, then coat with cornstarch, then coat with cooking oil
Boil a potful of water and add fish filet to the pot, then immediately remove from heat and let sit with lid on for 5 minutes
To a pot, add seafood or beef stock, lacto-fermentation brine, and fermented mustard greens, then simmer for 10 minutes
Add vermicelli and simmer for 5 minutes (optional)
In a pan, heat organic canola oil until it smokes, then immediately add all aromatics and remove from heat
Pour soup in a bowl, then add fish, then pour oil in and serve
