麻婆豆腐 / Mapo Tofu¶

🥦Ingredients¶
200 g Tofu
70 g ground meat
🧂Seasoning¶
Ginger (10 g)
Doubanjiang (2 tbsp)
🔢Directions¶
Let tofu expel water by putting a weight on top
Cut tofu into small cubes
Stir-fry ground meat
Chop up doubanjiang
In a pan, add cooking oil and heat until smoking
Add crushed pepper, cut sichuan pepper, chopped ginger, cut thai chili
Add doubanjiang and fry over low heat
Add water and thicken with cornstarch to make sauce
Adjust the salinity with soy sauce
Add tofu and sugar and simmer for 10 minutes
Add ground meat and keep warm for about an hour to let flavors seep in
Serve with tofu and sauce over a bed of rice (optional), then green onions, then ground sichuan pepper, then chili oil (optional)
