卤肉饭 / Taiwanese Braised Pork Rice¶

Pork belly [200 g]
Shiitake (optional)
Onions [½]

🔢Directions¶
Chop pork belly (and optionally shiitake) with heavy kitchen knives or a food processor
Make hard boiled eggs
Make caramel by reducing sugar dissolved in water, then dilute with water
Dice onions and caramelize with cooking oil over low heat
Add chopped pork belly and brown over low heat
Add cooking wine, water, soy sauce, caramel, white pepper, star anise, sugar [1 tsp], peeled eggs (and optionally chopped shiitake)
Simmer for 40 minutes
Make sure sauce has reduced, otherwise reduce over high heat with all other ingredients removed, then add ingredients back
Serve with rice and vegetables
