Fuzhu
Roasted peanuts (optional)

Reconstitute fuzhu
Cut celery on the bias and season with salt for 1 hour
Dry fuzhu in a hot wok and fry with little cooking oil, set aside
Make liaoyou with garlic, ginger, green onion, star anise and sichuan pepper
Squeeze water out of celery and dry with paper towels, then mix with crushed garlic
Dress with salt, liaoyou, sugar, black vinegar and sesame oil
