Duo jiao

Reconstitute wood ear mushroom, cook in water for a few minutes then cool with tap water
Blanch bamboo shoots for a few minutes
Slice garlic, ginger, green onions, bamboo shoots, wood ear mushroom, carrots
Rinse duo jiao, strain and set aside
Make slurry with cornstarch and water
Julienne pork shoulder
In a mixing bowl, combine pork shoulder, a little bit of cornstarch, white pepper and soy sauce, then let sit for 15 minutes
In a pan, boil a large amount of water, quickly cook the pork and strain
In a pan, heat cooking oil until smoking, then add aromatics (garlic, ginger, green onions, duo jiao)
Add sugar, bouillon, soy sauce, black vinegar and slurry
Add the pork, the vegetables and mix well
