Use a meat mallet to soften the pork chop
Marinade the pork chop with a little soy sauce and white pepper
Coat the pork chop with cornstarch and egg whites
Make batter with water and flour
Heat a pan of cooking oil, coat the pork chop with batter and deep fry for 2 to 3 minutes
In a pan, make scallion oil with cooking oil, a batch of green onions and a few slices of ginger until slightly caramelized
To the pan, add shaoxing wine, sugar, soy sauce, bouillon powder, white pepper
Bring to a boil and simmer for 10 minutes before removing from heat
Let the pork chop sit in the sauce for 10 minutes
