🥦Ingredients

Firm tofu [1 block, 450 g] (preferably stinky tofu if sold near you)

Duo jiao

Green onions

Cilantro

Shaoxing wine

Cornstarch [1 tsp]

Cooking oil

Water

🧂Seasoning

Sugartsp]

Ground white peppertsp]

Bouillon powder [1 tsp]

Black vinegar

Soy sauce [a dash]

Chili oil [1 tbsp]

Garlic [2 cloves]

🔢Directions

  1. Wrap tofu in paper towel and put a weight on top then let sit for 30 minutes to let water out

  2. To a bowl, add chopped green onions, chopped cilantro, chili oil with chili, grated garlic

  3. Slice tofu into finger thickness and pat dry

  4. To a pan of smoking hot oil, deep fry tofu for 1-2 minutes

  5. Remove tofu from the pan, and reheat until oil is smoking hot, then deep fry again for 1-2 minutes to establish crispy skin

  6. To a pan, add water, slurry, bouillon powder, soy sauce, black vinegar, shaoxing wine, ground white pepper, sugar and rinsed duo jiao

  7. Reduce until sauce covers just the bottom of the pan

  8. Add fried tofu to the pan and mix well

  9. Pour everything in the bowl and mix well

  10. Serve
