臭豆腐 / Stinky Tofu¶

🥦Ingredients¶
Firm tofu [1 block, 450 g] (preferably stinky tofu if sold near you)
Duo jiao
Cornstarch [1 tsp]
🧂Seasoning¶
Ground white pepper [½ tsp]
Soy sauce [a dash]
Chili oil [1 tbsp]
🔢Directions¶
Wrap tofu in paper towel and put a weight on top then let sit for 30 minutes to let water out
To a bowl, add chopped green onions, chopped cilantro, chili oil with chili, grated garlic
Slice tofu into finger thickness and pat dry
To a pan of smoking hot oil, deep fry tofu for 1-2 minutes
Remove tofu from the pan, and reheat until oil is smoking hot, then deep fry again for 1-2 minutes to establish crispy skin
To a pan, add water, slurry, bouillon powder, soy sauce, black vinegar, shaoxing wine, ground white pepper, sugar and rinsed duo jiao
Reduce until sauce covers just the bottom of the pan
Add fried tofu to the pan and mix well
Pour everything in the bowl and mix well
Serve
