Beef shank
🧂Seasoning¶
Dried chili peppers (optional)
🔢Directions¶
Rapidly cook the outer layer of the beef with an air fryer
In a saucepan or a stock pot, bring just enough water to cover the beef to a rolling boil
Add aromatics and keep boiling for a few minutes
Add beef and simmer, season with one part soy sauce to one part dark soy sauce so that the brine has 1.2% salt
Simmer for 3 hours
Let sit for it to cool down and then refrigerate the beef
Slice and serve
