Beef shank

🧂Seasoning

Star anise

Sichuan pepper

Bay leaves

Fennel seeds

Dried chili peppers (optional)

Soy sauce

Dark soy sauce

🔢Directions

  1. Rapidly cook the outer layer of the beef with an air fryer

  2. In a saucepan or a stock pot, bring just enough water to cover the beef to a rolling boil

  3. Add aromatics and keep boiling for a few minutes

  4. Add beef and simmer, season with one part soy sauce to one part dark soy sauce so that the brine has 1.2% salt

  5. Simmer for 3 hours

  6. Let sit for it to cool down and then refrigerate the beef

  7. Slice and serve
