🥦Ingredients

30 g soy flour

300 ml water to make tofu

200 ml water to make soup

0.8 g GDL (Glucono delta-lactone)

1 tsp dissolved cornstarch

Sliced wood ear

Sliced shiitake

Tiny dried shrimp

Chopped cilantro

Chopped zha cai

Soy sauce (8 ml or 512 mg sodium equivalent)

Oyster sauce (7 g or 350 mg sodium equivalent)

Salt (1 g or 393 mg sodium equivalent)

Cooking wine (10 ml)

Chopped garlic (1 clove)

Sesame oil (to taste)

Chili oiltsp)

🔢Directions

  1. Soak wood ear and shiitake in water until reconstituted

  2. Dissolve soy flour in water. Add to a saucepan with a strainer, bring to boil then immediately remove from heat for a couple of seconds

  3. Simmer for 5 minutes

  4. Add GDL to a bowl, pour the solution into the bowl with a strainer and stir well. Cover with aluminum foil and wait for 50 minutes at room temperature

  5. Blanch wood ear and shiitake for 5 minutes, then slice them

  6. Add water, wood ear and shiitake to a saucepan. Add cooking wine and bring to boil

  7. Add soy sauce, oyster sauce and salt. Thicken with cornstarch

  8. Add sesame oil with chopped garlic to the bowl with coagulated tofu, pour in the soup, then add toppings (dried shrimp, zha cai and cilantro). Add chili oil to taste and serve
