🥦Ingredients

Cucumbers (400 g)

🧂Seasoning

Salttsp, not for brine)

Sugar (40 g)

Dark vinegar (40 ml)

Soy sauce (60 ml)

Star anise

Sichuan pepper

🔢Directions

  1. Parboil cucumbers and mix with salt

  2. Cover cucumbers with a plate and a weight to let water out

  3. Combine seasonings and aromatics to make a brine

  4. Rinse salt off cucumbers and combine with the brine in a ziploc bag

  5. Let sit in the refrigerator for 2 days, then serve
