Chicken legs (1 per serving)
🧂Seasoning¶
Ginger (same volume as garlic)
Thai chili (2 per serving)
Sugar (a little)
Black vinegar (a little)
🔢Directions¶
Make sauce with a food processor without oil
Marinate chicken with salt (½ tsp per leg)
Debone and cook chicken legs either sous vide (65C, 45min) or simmered (30min) or slow roasted (210F, 1hr)
Chill chicken in the refrigerator, then cut into slices
Pour sauce and chili oil on top of plated chicken
Sprinkle sesame seeds and crushed peanuts
