Hard tofu

Cut vegetables
Parboil wood ear mushroom
Press water out of tofu with a weight
Fry tofu in oil over high heat to establish crust
To a heated pan of rapeseed oil, add garlic, ginger
Remove from heat and add chopped doubanjiang then keep stirring until fragrant
Add water and soy sauce, then simmer for 10 minutes
Strain sauce, then add tofu and simmer for another 10 minutes
Reduce the sauce
Add green bell peppers and wood ear mushroom
Serve
