100 g beef chuck short ribs
Beef bone or beef stock

Prepare beef stock with beef bone in advance
Stir fry beef with black pepper in a saucepan until slightly brown
Add stock and bring to a boil
Simmer until meat is tender for 2 hours with added spice, season with soy sauce twice, once 30 minutes before done and once when done
With an immersion blender, emulsify soup
Blanch bok choy
Cook noodles
Make chili oil with doubanjiang and season beef if needed
Combine soup, noodles, toppings (bok choy, fermented mustard greens) and chili oil in a bowl and serve
