饺子 / Chinese Dumplings¶

🥦Ingredients¶
Flour (200 g, makes ~30 wrappers)
Water (adjust accordingly)
Ground meat (150 g)
Vegetables (same as ground meat in weight)
Green onion (10 g)
🧂Seasoning¶
Salt (3 g)
Ginger (10 g)
🔢Directions¶
Make ball shaped dough, set aside
Make filling
Split dough into flat rectangular pieces
Flatten dough with a roller and make skin with a mold
With a rolling pin, taper the sides of the skin
Fill skin with filling and shape the dumplings
Boil a large pan of water over high heat
After water comes to a boil, add dumplings and bring to a boil once more
Add cold water to the pan to cool it down whenever it boils and then cook for 3 minutes
Strain and set aside the dumplings over a rack to let steam evaporate and dry the skin of the dumplings
Serve with dippings like black vinegar and salt, chili oil and raw garlic
