Make dough by mixing 90 grams of flour, 45 ml of hot water and ⅛ tsp of salt, let sit for 20 minutes #. Add 10 grams of flour and ⅛ tsp of salt to a bowl #. Chop green onions #. Heat cooking oil in a pan until it smokes #. Add chopped green onions to the pan, then pour into the bowl, mix well #. Reshape the dough into a cylinder, and cut into small discs #. Layer the discs together with scallion oil brushed in between each layer #. Press down to make a pancake, then let sit for 15 minutes for dough to relax #. To a heated pan, add the pancake and steam on both sides over low heat, for 8 minutes #. Make a few cuts and serve
