豚骨ラーメン / Tonkotsu Ramen¶

🥦Ingredients¶
Ramen Noodles
Pork feet (one piece split in half)
Onions (¼)
Carrots (20 g)
Cabbage stems (optional)
Wood ear mushrooms

Make ajitama and menma, cook and slice wood ear mushrooms
Make slow cooked chashu (74C 10hrs), 250 g soy sauce, 150 g sugar, 250 g mirin, ginger and negi
Chop up garlic and mix with sesame oil, chili oil, then set aside
Slice green onions
With an air fryer, brown pork feet
To a pressure cooker, add pork feet, garlic (2-3 cloves), ginger (10 g), negi, onions, carrots, cabbage stems, black garlic, water (up to 2x volume of pork feet)
Pressure cook for 2 hours, add 2 slices of bacon, then pressure cook for another hour
Strain soup and blend meat, then mix back into the soup
To a serving bowl, add hondashi, pour soup (350 ml) in and stir well
Add garlic sesame chili oil, then noodles, then toppings and serve
