🥦Ingredients

Ramen Noodles

Pork feet (one piece split in half)

Bacon

Onions (¼)

Carrots (20 g)

Cabbage stems (optional)

Eggs

Wood ear mushrooms

Bamboo shoot

Green onions

Water

Black garlic (optional)

Ginger

Negi

Shirodashi

Sesame oil

Chili oil

🔢Directions

  1. Make ajitama and menma, cook and slice wood ear mushrooms

  2. Make slow cooked chashu (74C 10hrs), 250 g soy sauce, 150 g sugar, 250 g mirin, ginger and negi

  3. Chop up garlic and mix with sesame oil, chili oil, then set aside

  4. Slice green onions

  5. With an air fryer, brown pork feet

  6. To a pressure cooker, add pork feet, garlic (2-3 cloves), ginger (10 g), negi, onions, carrots, cabbage stems, black garlic, water (up to 2x volume of pork feet)

  7. Pressure cook for 2 hours, add 2 slices of bacon, then pressure cook for another hour

  8. Strain soup and blend meat, then mix back into the soup

  9. To a serving bowl, add hondashi, pour soup (350 ml) in and stir well

  10. Add garlic sesame chili oil, then noodles, then toppings and serve
