Wrap tofu in paper towel and put a weight on top then let sit for 30 minutes to let water out #. To a bowl, add chopped green onions, chopped cilantro, chili oil with chili, grated garlic #. Slice tofu into finger thickness and pat dry #. To a pan of smoking hot oil, deep fry tofu for 1-2 minutes #. Remove tofu from the pan, and reheat until oil is smoking hot, then deep fry again for 1-2 minutes to establish crispy skin #. To a pan, add water, slurry, bouillon powder, soy sauce, black vinegar, shaoxing wine, ground white pepper, sugar and rinsed duo jiao #. Reduce until sauce covers just the bottom of the pan #. Add fried tofu to the pan and mix well #. Pour everything in the bowl and mix well #. Serve
