Let tofu expel water by putting a weight on top #. Cut tofu into small cubes #. Stir-fry ground meat #. Chop up doubanjiang #. In a pan, add cooking oil and heat until smoking #. Add crushed pepper, cut sichuan pepper, chopped ginger, cut thai chili #. Add doubanjiang and fry over low heat #. Add water and thicken with cornstarch to make sauce #. Adjust the salinity with soy sauce #. Add tofu and sugar and simmer for 10 minutes #. Add ground meat and keep warm for about an hour to let flavors seep in #. Serve with tofu and sauce over a bed of rice (optional), then green onions, then ground sichuan pepper, then chili oil (optional)
