Slice fermented mustard greens diagonally #. Rinse dried chili and cut into rings with a pair of scissors #. Slice garlic, ginger, green onions #. Slice fish filet and season with salt and white pepper, then coat with cornstarch, then coat with cooking oil #. Boil a potful of water and add fish filet to the pot, then immediately remove from heat and let sit with lid on for 5 minutes #. To a pot, add seafood or beef stock, lacto-fermentation brine, and fermented mustard greens, then simmer for 10 minutes #. Add vermicelli and simmer for 5 minutes (optional) #. In a pan, heat organic canola oil until it smokes, then immediately add all aromatics and remove from heat #. Pour soup in a bowl, then add fish, then pour oil in and serve
