Cut vegetables #. Parboil wood ear mushroom #. Press water out of tofu with a weight #. Fry tofu in oil over high heat to establish crust #. To a heated pan of rapeseed oil, add garlic, ginger #. Remove from heat and add chopped doubanjiang then keep stirring until fragrant #. Add water and soy sauce, then simmer for 10 minutes #. Strain sauce, then add tofu and simmer for another 10 minutes #. Reduce the sauce #. Add green bell peppers and wood ear mushroom #. Serve
