Dice lamb shoulder, season with salt, oyster sauce and onion puree, let sit in the refrigerator for half a day
Return lamb to room temperature, dry with a paper towel, and coat with cooking oil
Cook lamb over high heat in an oven or an air fryer
In a heated pan, combine cooking oil, spice mix and cumin seeds
Coat lamb in spice and make into skewers
Serve
