Pork belly (700g -> 400 g after searing and blanching)
Shaoxing wine (trying 250 g, add another 50 g after)
Cornstarch (Try 1 tsp next time)
🧂Seasoning¶
Sugar (trying 4 tsp, try more)
Star anise (1)
🔢Directions¶
Blanch for an hour
Sear the fat and cut into small pieces
In a saucepan, simmer with a drop lid for 2 hours, fat down over low heat
Turn meat upside down, then reduce over high heat
Thicken with cornstarch (try 2 tsp)
