Rapidly cook the outer layer of the beef with an air fryer #. In a saucepan or a stock pot, bring just enough water to cover the beef to a rolling boil #. Add aromatics and keep boiling for a few minutes #. Add beef and simmer, season with one part soy sauce to one part dark soy sauce so that the brine has 1.2% salt #. Simmer for 3 hours #. Let sit for it to cool down and then refrigerate the beef #. Slice and serve
