Chop pork belly (and optionally shiitake) with heavy kitchen knives or a food processor #. Make hard boiled eggs #. Make caramel by reducing sugar dissolved in water, then dilute with water #. Dice onions and caramelize with cooking oil over low heat #. Add chopped pork belly and brown over low heat #. Add cooking wine, water, soy sauce, caramel, white pepper, star anise, sugar [1 tsp], peeled eggs (and optionally chopped shiitake) #. Simmer for 40 minutes #. Make sure sauce has reduced, otherwise reduce over high heat with all other ingredients removed, then add ingredients back #. Serve with rice and vegetables
