Reconstitute fuzhu #. Cut celery on the bias and season with salt for 1 hour #. Dry fuzhu in a hot wok and fry with little cooking oil, set aside #. Make liaoyou with garlic, ginger, green onion, star anise and sichuan pepper #. Squeeze water out of celery and dry with paper towels, then mix with crushed garlic #. Dress with salt, liaoyou, sugar, black vinegar and sesame oil
