In a pan, make caramel with sugar (20 g) and cooking oil #. When caramel starts bubbling, add chicken wings, star anise, ginger and stir well until the skin is cooked #. Add shaoxing wine, soy sauce, sugar, white pepper and simmer for 20 minutes #. Remove chicken wings and reduce the sauce #. Add chicken wings back and coat well in the sauce, then serve
